First things first!

Cutting out carbs sounds simple, but when you feel like rice or pasta with a saucy dish, what do you do? You make cauliflower rice! It's simple to make, and can be done in a short space of time. Try this basic banting recipe, to curb those carbohydrate cravings:

 

What you will need:

• One large head of cauliflower - this makes about three servings of rice
• Food processor OR grater

 

Method:

1. Start buy rincing your fresh cauliflower and breaking it up into florets.

 

2. Process cauliflower until it is the size of rice, either using the plain steel blade or the shredder blade food processor, for about 2 mins - do not over process. Cauliflower should turn into pieces slightly larger than couscous. Alternatively, you can grate it using a handheld grater. 

 

3. Place a large frying pan on medium heat with a tablespoon of butter or coconut oil 

 

4. When butter is melted and hot, add the cauliflower and stir until cooked (about 3 mins)
DO NOT add water - cauliflower has enough of its own
DO NOT over cook! It will go soggy

P.S. This is basic rice. Fried chopped onion, salt, garlic, capers, nuts and/or seeds can be added for additional yumminess!
