Plain yoghurt scones that Joburgers love

It's winter, which means it’s the perfect time to get cosy at home, cook hearty meals and enjoy some baking while keeping warm indoors.

One of the most popular treats to make during the colder months is scones. They're delicious, filling and full of flavour. Best of all, they're even more enjoyable when paired with a hot cup of tea or coffee.

If you're looking for the perfect winter baking recipe, we’ve got you covered. Here’s how to make soft, fluffy scones using either amasi or plain yoghurt.


Ingredients

5 cups cake flour
5 teaspoons baking powder
1 cup sugar
1/2 tspn salt
1 cup coconut
250 grams margarine
2 cups full cream plain yoghurt or amasi
1/2 tspn vanilla essence
2 eggs
1 egg for brushing

Instructions
In a large bowl, sift in flour and baking powder.
Add sugar and salt and mix well
Add coconut
Rub in margarine until you get a crumbly mixture.

In a separate bowl, add yoghurt, eggs and vanilla essence and mix well.
Pour wet ingredients into the flour mixture.
Combine dry and wet ingredients.
Transfer dough to a floured surface.
Spread the dough and slightly flatten it using a rolling pin or your palm.
Dip your cutter in flour
Coat the inside with softened butter or a nonstick baking spray
Place the cut dough on a prepared baking pan
Brush the top with milk or egg wash.

Bake in a preheated oven at 180 degrees for 20 minutes or until golden brown.
