With January winding down, some of that motivation we had at the beginning of the year may be winding down along with it!

Cue Izelle Hoffman! Our Mindfulness Maven! Our Lifestyle Chef! Our Mind, body, and spirit coach! She is back and she is going to help us all live more mindfully in 2021! Starting with our health!

She joined me on a Zoom to talk about the one thing you can do in the first few weeks of 2021 to ensure you hit the goals you have set for yourself! And, if you haven't set any goals, this podcast will inspire to you start!

Izelle Hoffman Cookies

Quick and easy Ginger biscuits.
Prep time 10min
Cooking time 8min
Servings 30-32

Ingredients
300g almond flour
300g tapioca flour (cassava flour)
50g tahini
2 tsp bicarb of soda
2 tsp cinnamon
4 tsp ground ginger
1 tsp cloves
1 tsp Oryx desert salt
1 tsp vanilla essence
2 tbsp blackstrap molasses
4 tbsp raw honey
1 tbsp apple cider vinegar 
120ml olive oil

1 egg whisked

Instructions
Pre heat oven to 220’C
Line a baking tray with parchment paper
Mix all the ingredients together except for the egg, beat it separate before adding to the mix
Mix and knead well till firm cookie dough
Roll dough out and cut into shapes with cookie cutters

Bake for 8-10min
