Recipe: How to make rich and creamy melkkos

There is no better way to start a cold morning than with a comforting bowl of melkkos.

The traditional South African dish will leave you feeling warm and fuzzy this winter. The porridge-like dessert is a favourite for breakfast in many homes.

Some people even have it for supper

Food blogger Landi Govender's melkkos recipe is quick and easy to make. 

"I love mine served warm, with a generous blob of butter and a dusting of cinnamon sugar. It’s rich, creamy, and honestly, it feels like having dessert for breakfast," Govender said. 

Here's how to make it.

Ingredients:

  • 500 ml low-fat milk
  • 62 g cake flour (± ½ cup)
  • 15 g butter (± 1 tablespoon)
  • ¼ teaspoon salt
  • ½ cinnamon stick
  • Cinnamon sugar for serving

(Mix about 25 g sugar + ½ tsp ground cinnamon — use to taste)

Method

Mix the flour and butter:

Rub the 15 g butter into the 62 g flour until crumbly. Stir in ¼ tsp salt.

Heat the milk:

In a saucepan, bring 500 ml low-fat milk and ½ cinnamon stick to a gentle simmer.

Add the flour mixture:

Slowly sprinkle in the flour mix while whisking constantly to avoid lumps.

Reduce the heat and simmer for 15–20 minutes, stirring occasionally, until thick and creamy.

Serve

Remove the cinnamon stick and spoon into bowls.

Sprinkle with cinnamon sugar and enjoy warm.
