What happens when you eat raw potato and is it safe?

Potatoes are one of the most enjoyable and delicious foods.

Whether boiled, mashed or fried, they are usually best enjoyed when cooked in some form.
You might be wondering why anyone would even eat a raw potato.

There are actually many raw potato advocates.

They argue that an uncooked potato has higher nutritional value.

A raw potato contains up to twice as much vitamin C as a baked potato. Others also mention that resistant starch is beneficial for gut and digestive health.
However, it is crucial to address the dangers of eating raw potatoes.
While it is unlikely to cause serious illness (unlike raw meat harbouring E. coli or salmonella), eating an uncooked potato is still not the best idea.

Here are the risks of eating a raw potato:
- Solanine and chaconine toxicity: These glycoalkaloids can cause digestive upset (gas and cramps), headaches, vomiting, and at high levels neurological symptoms.
- Lectins (antinutrients): Can interfere with nutrient absorption and contribute to stomach cramps, gas, and bloating.
- Digestive discomfort: Raw potatoes contain resistant starches that are hard to digest, potentially leading to gastrointestinal issues like bloating and gas.
- Bacterial or soil contamination: Raw potatoes may carry bacteria or contaminants from the soil that cooking would otherwise eliminate.
- Sunlight exposure increases toxicity: Potatoes exposed to light can turn green and produce more solanine, making them more toxic.
There are easier and more delicious ways to increase your vitamin C and prebiotic intake.
