Philicity Reeken shares her deliciously decadent butternut soup recipe

Jacaranda FM's Philicity Reeken made a delicious and decadent butternut soup for dinner with saffron, orange zest and some cream - she shares the recipes with you!

Winter is around the corner - and what better than a delicious soup to tantalize your tastebuds.
The Scenic Drive's Philcitiy Reeken shared one of her most favourite soup recipes with us - And its a butternut soup. But as we all know Philicity, she decided to spice it up and made it her own.
RECIPE:
- One onion
- Two medium carrots
- One apple
- One stick of celery with leaves
- Salt
- One fresh chilli
- One big butternut
- Ginger
- Saffron
- Orange Zest
METHOD:
- Chop half an onion, two medium carrots, one apple, one stick of celery with leaves.
- Fry them on a medium heat with a pinch of salt and 1 fresh chilli.
- Then add in your chopped butternut just use one big one with some freshly grated ginger.
- Let it braise a little.
- Then add in about 750- 1l of boiling water with veg stock.
- If you have saffron steep it in a little warm water for 20-30min. Add that in.
- Cook for approximately 30min. Till soft. Then add in cream to taste and blend.
- Let it cook for about another 7min.
- Serve hot with fresh bread/ croutons/ tortilla chips and add some orange zest.
