Crispy roast potatoes

Do your potatoes need some help in getting them extra crispy when roasting?

Getting that delicious crunch is not as hard or time consuming as you might think.

Here are a few tips to help you:

1. Boil your potatoes first, but keep them firm. Don’t overboil your potatoes. Drop them in the water while it’s still heating up, cover with a lid and wait till it comes to the boil. Leave them in the boiling water for about 5 minutes and remove them immediately. The potatoes should feel tender to the touch, but still quite firm.

2. Dry your potatoes before roasting them. Lay the boiled potatoes out on a cutting board and allow them to cool off and dry before transferring to the oven. 30 minutes should do it.

3. Create texture. Take a fork and create ridges on the potatoes. These ridges help with the crisping of the outer edges.

4. Grease them up. Mix 2 tablespoons of olive oil and about 60g of melted butter and brush your potatoes with this mixture. Be sure to brush it during the cooking process again. This mix will give your potatoes a beautiful golden colour as well.
Don’t forget to brush the oven dish with the mixture too before laying your potatoes on them.

5. Overcrowding won’t help. Don’t overcrowd the pan, you can forget about crispy potatoes if your pan is too full. Instead they’ll just boil in your oil mixture.

6. Don’t forget the salt. Salt help absorb moisture. So, crack some delicious sea salt over your potatoes just before putting them in the oven. Not only will that help the crisping process, but the potatoes will taste even more delicious.

7. Give it time. Even though you’ve parboiled your potatoes, they still need a decent amount of time in the oven to crisp up. You need to give them at least 50 minutes, 10 minutes extra if you like them darker and crispier.
