A chicken casserole is a staple item on family dinner menus all over the world. But how can you prevent a simple chicken dish from becoming too boring to eat? By spicing up the name of your recipe, of course.

And, if you are anything like Madelein Pretorius, you might want to experiment with the method you use to cook the chicken, too.

Madelein says she often just throws the below ingredients together and puts them in the oven, ready to be surprised by what comes out.

Ingredients

  • 1 kg Chicken thighs or drumsticks
  • 1 green pepper
  • 1 punnet of mushrooms
  • 1 large onion
  • 1 packet of mushroom soup powder
  • 1 packet of Cream of Chicken soup powder
  • 1 cup of rice
  • 1 broccoli or cauliflower

Method

  1. Line casserole dish with Spray ’n Cook
  2. Start with pouring the rice into the casserole dish so that the bottom is lined
  3. Cut green pepper into pieces and add to the mix
  4. Cut mushrooms into pieces and add to the mix
  5. Cut onion into rings and add to mix
  6. Stack broccoli or cauliflower on top of the mix followed by chicken pieces
  7. Sprinkle both soup packets on top of the chicken
  8. Add water and bake (covered) for 1 hour 30 minutes at 160°
  9. Grill until brown and enjoy!
