RECIPE: Philicity Reeken's Be My Valentine pasta

Recipe for the chicken:
Four chicken thighs
Bag of broccoli/ chopped baby marrows
1 teaspoon of chilli flakes
1-2 teaspoons of thyme
Fresh basil
2-4 cloves minced garlic
1 cup of chicken stock
1 and a half cups chopped of sundried tomatoes
1 and a half cups of cream
Salt and pepper
Method:
Preheat oven to 180.
Salt and pepper chicken then brown in the oven.
When browned take it out and put it on a plate.
In the same dish, fry the garlic, thyme, chilli flakes and sundried tomatoes for 1-2 min.
Then add in the veg and continue cooking for three or so minutes.
Add in cream, stock stir then add chicken thighs.
Put the dish in the oven for approximately 20-25 minutes, until chicken is cooked.
Add fresh basil.
Serve with fresh bread, rice or salad.
Recipe for the lemon pasta:
3/4 cup fresh lemon juice
Zest of 1-2 lemons
3 cloves minced garlic
3/4 cup olive oil
Handful of grated parmesan
Black pepper
Fresh parsley
Method:
Boil the pasta in salted water, keep about a cup of the pasta water.
In a pot, heat the oil on a low to medium heat, add in garlic, parmesan, lemon zest and juice.
Throw in the pasta, mix through and grind some black pepper and add fresh parsley.
Ps: You can make it fancy by adding prawns or shredded rotisserie chicken!
