Banting cinnamon and ginger cookies

Tea time doesn't mean you have to munch on a rye cracker! Try out this excellent low carb treat!

Cinnamon and Ginger Cookies!

Hmmm, these bad boys are so easy to make and the perfect accompaniment to your cup of coffee.

 

Ingredients:

•1/2 Cup coconut flour
•1/2 tsp baking soda
•1/8 tsp sea salt
•4 tsp ground cinnamon
•4 tsp ground dry ginger
•6 Tbs butter
•4 Tbs Xylitol
•1 egg
•1/2 tsp vanilla extract

 

 

Method:

1. Mix coconut flour, baking soda, cinnamon, ginger and salt. Set aside.

2. Using a mixer, mix butter, xylitol, egg, and vanilla extract. 

3. Combine the flour mixture to the egg mixture. Blend well.

4. Wrap the dough in plastic wrap and refrigerate for 30 mins.

5. Place the dough in-between two sheets of wax paper. Roll out the dough to 1/4inch thickness.

6. Cut into pretty little shapes

7. Bake at 180°c for about 6-7 minutes, until edges are golden brown.

8. Let the cookies cool completely as they will harden as they cool.
