One Pan Rice Dish

Savoury fried 1 Pan Rice Dish


Prep time: 15min

Cooking time: 10min 

Servings: 4


Ingredients -

  • 1 cups of rice cooked 
  • 1 1/2- 2 cups of water
  • 1/2 tsp oryx salt
  • 1 tsp turmeric
  • 1 tsp dried thyme or herb of your choice
  • 1/2 tsp ground black pepper
  • 2 tbsp Olive oil
  • 1 medium Red onion or 2 shallots diced
  • 2 peppers cut into strips (i prefer red and orange)
  • 1/2 tsp Oryx Salt
  • 1 tbsp Raw Honey
  • 3 tbsp sesame seeds
  • 2 tsp sweet basil or Italian herb mix
  • 100g sundried tomato
  • 250-300g pre-cooked protein of your choice, I used Chicken Breast cut up into chunks
  • 100g of wilted baby spinach (for fibre and alkalizing purposes)
  • Freshly Cut Avocado Slices, I prefer Viavi Avocado’s for their extended shelf life (Exclusive to Woolworths)

Method - 

  1. Pre-cook the rice by adding the salt, turmeric, thyme and ground black pepper to the water
  2. Make use of a medium-large frying pan
  3. Preheat the pan with olive oil and fry the onion and peppers till cooked,
  4. Add the salt and honey and allow to caramelize
  5. Add the rice to the pan and stir-fry for 2-3min
  6. Add the protein of your choice, and stir fry for around 5min so that all the flavours can mix well
  7. Finish off by adding the sundried tomatoes and wilted baby spinach and stirring it through for another 2-3min
  8. Garnish with freshly sliced avocado before serving 
  9. Can be stored in the fridge in an airtight container
