Does bacon belong in a potato salad? Vote now!

Everyone likes their potato salad in a particular way. Which of these two listener recipes is more to your taste? Read on to see how you can cast your vote. 


We are still looking for the ultimate potato salad ahead of the Scenic Straatbraai. 

The next two contenders are Carolina Staunton and Jaco Marnewick. Have a look at their recipes below.

Jaco Marnewick's recipe


  • Potatoes
  • 4 eggs
  • 1 small onion
  • Cross & Blackwell tangy mayonnaise
  • parsley (enough for flavour and garnish)
  • salt and pepper to taste


  • Boil potatoes with the skin on until soft. Chop into small pieces (not cubes).
  • Boil eggs and set aside to cool. Chop into small pieces.
  • Finely chop the onion
  • Mix potatoes, eggs, onions, salt, pepper and parsley together. 
  • Add a generous amount of mayonnaise to the potato mixture. Finish off with a sprinkle of parsley

Jaco's recipe was developed by his mother, so you know it's been tried and tested at many family functions. Notice the addition of an onion, and the way the recipe specifies that you should use 'tangy' mayonnaise.

Carolina Staunton's recipe


  • 6 large potatoes with the skin on 
  • 1 packet of smoked streaky bacon
  • 1 large onion halved and then sliced into rings
  • 250ml  mayonnaise
  • 125ml fresh cream 
  • 1 tbsp whole grain mustard 
  • 1 tbsp freshly chopped origanum 
  • 1 tbsp fresh chopped Italian parsley (have a bit extra for garnishing)
  • Freshly ground salt and pepper to taste


  • 1 tbsp brandy


  • Boil potatoes in salted water with the skin on. Cook until soft, but not broken. Leave to cool. 
  • Cut potatoes into thick slices. Arrange slices on a large platter, overlapping them slightly. 
  • Fry bacon until crispy. Chop into bite-sized pieces and set aside. 
  • Fry onion until caramelised and then set aside.
  • Mixed mayonnaise, fresh cream, whole grain mustard and herbs in a bowl. Add brandy if you are using it.
  • Pour the mayonnaise mixture evenly over the potatoes. Make sure they are all covered. 
  • Sprinkle bacon and onion over the top. Finish off with fresh parsley.

Carolina's potato salad is for those with an adventurous palate, as it includes bacon, mustard and even a cheeky bit of brandy.
